Sella (or Parboiled) rice is soaked, steamed, and dried before milling. This locks in nutrients and gives the grain its signature light golden color and robust texture.
We pick the best paddy from our network of beloved farmers.
We gently dry the paddy (from 16%-18%) to the required initial moisture.
The paddy is soaked and then steamed for a good 10 to 36 hours. This locks nutrients into the kernel!
The steamed paddy is carefully dried to the required approx 12% moisture level for milling.
The rough outer husk is removed from the now light-golden kernel.
The grain gets polished—not adding anything, just a quick sharpening to make it look gorgeous!
